This classic pink casserole is a nostalgic dish that brings back family memories and comfort food vibes. Creamy, flavorful, and easy to make, it’s perfect for weeknight dinners or special gatherings. Inspired by April Brennen’s family recipe.

Ingredients

  • Ground beef

  • Onion and celery

  • Egg noodles (medium size)

  • Tomato sauce

  • Cottage cheese

  • Cream cheese

  • Sour cream

  • Salt, pepper, and optional garnish: sliced tomatoes or pickles (very 70s!)

Instructions

  1. Heat oven to 350.

  2. Cook noodles as directed on package, and drain.

  3. In a large skillet, cook and stir meat, onion and celery until meat is brown and onion is tender.

  4. Drain off fat.

  5. Stir in tomato sauce and salt, and heat to boiling.

  6. Reduce heat, and simmer one minute.

  7. Remove from heat.

  8. Stir in cottage cheese, cream cheese, sour cream and noodles.

  9. Pour into ungreased 1 ½ quart casserole dish.

  10. Slice tomato, arrange on top.

  11. Cover, and bake 30 minutes.

Recipe Notes

For extra flavor, add sautéed onions and mushrooms to the mix, or swap potato chips for panko breadcrumbs for a crunchy topping.
