About this Recipe
This simple yet unforgettable fried catfish recipe comes from Cindy’s father, a man who believed good food didn’t need to be fancy—it just needed love and the right technique. Raised in East Texas, Cindy remembers the perfect crisp and flavor of her dad’s fried catfish. This recipe honors his legacy with just three ingredients and a whole lot of heart.
Ingredients
- 2 - 3 pounds of fresh catfish filets
- 1 cup corn meal
- 1 cup of buttermilk
- Salt and pepper
Instructions
-
Heat the Oil
In a heavy-bottomed pot or deep fryer (like a Fry Daddy), heat oil over medium-high heat until it reaches frying temperature (about 350–375°F / 175–190°C).
-
Soak the Fish
While the oil heats, place the catfish pieces in a bowl and soak them in buttermilk. This helps tenderize the fish and helps the coating stick better.
-
Coat the Filets
In a separate shallow dish, combine the cornmeal, salt, and pepper.
Remove the fish from the buttermilk, letting the excess drip off, then dredge each piece in the cornmeal mixture, coating it evenly on all sides.
-
Fry the Fish
Carefully place a few coated filets into the hot oil—don’t overcrowd the pot, or the temperature will drop and the fish won’t crisp up properly.
Fry each piece for about 4–5 minutes, or until the coating is golden brown and the fish flakes easily with a fork.
-
Drain and Serve
Use tongs or a slotted spoon to remove the fish from the oil. Place on a paper towel-lined plate to drain excess oil.
Recipe Notes
Don’t skip the buttermilk soak—it tenderizes the fish and balances any “muddy” flavor. And keep the fillets to a similar size (about 2x3 inches) to ensure even cooking and perfect crispiness.
