In the American South, black-eyed peas are eaten on New Year’s Day to symbolize abundance and prosperity. Their coin-like shape and plentiful nature represent wealth in the year ahead.

You prepare them simply — with salt pork, aromatics, and time — letting the pressure cooker transform dried beans into creamy comfort.

Serve alone or as part of Hoppin’ John with rice, pork, and greens.

Ingredients

  • 1 lb dried black-eyed peas, rinsed and checked

  • 8–12 cups water

  • 4–6 oz salt pork (or bacon or ham hock)

  • 2–3 cloves garlic, minced

  • 1–2 shallots, chopped

  • Fresh or dried herbs (thyme works well)

  • Salt to taste

Optional for serving:

  • Cooked white rice

  • Collard greens, cabbage, or kale

  • Cornbread

Instructions

  1. Rinse black-eyed peas thoroughly and inspect.
  2. Add peas to pressure cooker.
  3. Pour in 8–12 cups water.
  4. Add salt pork, garlic, shallots, and herbs.
  5. Cook under pressure for about 90 minutes.
  6. Allow natural release.
  7. Adjust seasoning and serve warm.

Recipe Notes

For a smokier flavor, use bacon or ham hock.

For a vegetarian version, omit pork and add smoked paprika for depth.
