Ingredients

10” flour tortilla

1 egg + 2 oz egg whites

Mexican 4-cheese blend (ample)

¼ cup butter, cut into pieces

2 oz medium salsa

Salt and pepper, to taste (for the eggs)
Instructions

Season & whisk: Whip the egg and egg whites until fully combined; season with salt and pepper.

Scramble: Heat a skillet to medium-high with a small amount of butter. Scramble eggs to preferred doneness; set aside.

Warm tortilla: Heat tortilla until pliable.

Build & wrap: Add eggs, ample cheese, and salsa to the bottom third of the tortilla. Fold in the sides over the filling, then roll up tightly to form a burrito.

Butter-sear all sides: Heat the pan to medium-low and melt one pat of butter. Place the burrito seam-side down. Turn the burrito, adding more butter as you rotate, until completely toasted and crisp on all sides.

Add butter in stages to avoid burning and keep the tortilla crisp.

Warming the tortilla first prevents cracking and makes wrapping easier.
