Chef Matt Love’s morning ritual for his wife evolved into a crisp, butter-seared breakfast burrito with cheese, salsa inside, and eggs balanced with extra whites. Simple, quick, and ridiculously satisfying.

Ingredients

  • 10” flour tortilla

  • 1 egg + 2 oz egg whites

  • Mexican 4-cheese blend (ample)

  • ¼ cup butter, cut into pieces

  • 2 oz medium salsa

  • Salt and pepper, to taste (for the eggs)

Instructions

  1. Season & whisk: Whip the egg and egg whites until fully combined; season with salt and pepper.

  2. Scramble: Heat a skillet to medium-high with a small amount of butter. Scramble eggs to preferred doneness; set aside.

  3. Warm tortilla: Heat tortilla until pliable.

  4. Build & wrap: Add eggs, ample cheese, and salsa to the bottom third of the tortilla. Fold in the sides over the filling, then roll up tightly to form a burrito.

  5. Butter-sear all sides: Heat the pan to medium-low and melt one pat of butter. Place the burrito seam-side down. Turn the burrito, adding more butter as you rotate, until completely toasted and crisp on all sides.

Recipe Notes

  • Add butter in stages to avoid burning and keep the tortilla crisp.

  • Warming the tortilla first prevents cracking and makes wrapping easier.

  • For extra crunch, let the burrito rest 1 minute before serving.
