Ingredients

1 cup butter, softened

  • 2 eggs
  • 2 tsp vanilla extract
  • 2⅓ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups rolled oats
  • 1 cup semisweet chocolate chips
  • 1 cup vanilla chips
  • ½ cup butterscotch chips
  • 1 cup chopped pecan

Optional Swap:Replace the chocolate, vanilla, butterscotch chips, and pecans with 3½ cups of your favorite trail mix for a fun, custom twist!

Instructions

  1. Preheat the Oven

Set your oven to 375°F (190°C).

  2. Cream Butter & Sugar

In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.

  3. Add Wet Ingredients

Beat in the eggs one at a time, then stir in the vanilla extract.

  4. Mix Dry Ingredients Separately

In another bowl, whisk together the flour, baking soda, and salt.

  5. Combine Wet & Dry

Gradually stir the flour mixture into the butter mixture until well blended.

  6. Add the Fun Stuff

Mix in the oats, chips, and pecans (or substitute trail mix).

  7. Shape the Cookies

Drop tablespoon-sized scoops of dough onto ungreased cookie sheets, spacing them about 2 inches apart.

  8. Bake & Cool

Bake for 8–10 minutes, or until the edges are lightly golden.

Let cookies cool completely on the baking sheet or a wire rack.

Recipe Notes

Store in an airtight container to keep them soft and chewy for days—if they last that long!
