Ingredients

  • 12 large eggs

  • ⅓–½ cup mayonnaise (to taste)

  • 1–2 Tbsp yellow mustard

  • 3–4 Tbsp finely minced sweet pickles (+1–2 tsp pickle brine, optional)

  • ½ tsp salt

  • ¼ tsp black pepper

  • Paprika, for dusting

Instructions

  1. Boil & cool: Place eggs in cold water, bring to boil, turn off heat, cover, and let sit 10 minutes. Transfer to an ice bath.

  2. Peel & slice: Peel gently. Cut horizontally for equal halves.

  3. Mash filling: Scoop yolks into a bowl, mash with mayo, mustard, sweet pickles, salt, and pepper until creamy.

  4. Fill & garnish: Spoon filling back into whites, sprinkle with paprika, and add optional garnishes.

  5. Chill & serve: Refrigerate 30–60 minutes before serving.

Recipe Notes

  • Peeling tip: Older grocery eggs often peel easier than very fresh farm eggs.

  • Travel tip: Use a Tupperware with a lid for potlucks—no smushed tops.

  • Make-ahead: Prep filling and whites a day ahead; assemble before serving.
